The Dill (Anethum graveolens) belongs to Apiaceae (the Carrot family). It is an annual herb that is native to India, Iran and West Asia. This herb is naturalized now in Europe and the coastal area of the Mediterranean. It was introduced into Japan in the middle of Edo Era (about 250 years ago). This herb can reach 60-100 cm in height and similar to Sweet fennel. The compound umbels are borne and bloom yellow flowers from April to July. The leaves have brisk pungency and commonly used for pickles, vinegar, fish or egg dishes. According to legend, this herb was used for witch's broom. It is also called "eneldo".
